Chicken in Cinnamon
Ingredients. For 2 People
• 4 Chicken Legs (No Skin).
• 1 Medium Onion (Diced Small).
• Garlic to taste (I use 4 Cloves).
• 3 Tbls spoons Olive Oil.
• 1 Knob of Butter.
• 10 Olives (No Stones).
• 4 Cinnamon Sticks.
• 4 Tbls Tomato (Paste not Puree) or 4 Tomatoes peeled and mashed.
• 1 Medium glass White Wine.
• 1 Small Cup Water.
• 1 Chicken stock cube.
• 4 medium Potatoes, 4 Carrots cooked for 15 mins..
Method.
In a heavy based saucepan, fry the onions & garlic, in the oil and butter, until tender, add the chicken, olives, water, stock cube tomato, & wine, and cook for a few minutes 4 or 5 should do. Stirring occasionally,
Then add the Cinnamon Sticks (Important do not add until after the wine and water) cook for a few mins.
Then add the potatoes, carrots, tomatoes, cook on a low heat with the lid on stirring occasionally (to prevent sticking to the bottom of the pot).
After about 10 mins, remove lid to render the juices down.
Serve on a bed of rice, or with chips, or with extra veg
