there are many types of Paella, this one that we like and cook ourselves,

Ingredients. (Paella Mixta)

Rice (round) 100gr/person (no need to wash it).
300ml water per 100gr rice.
Olive Oil.
Onions. (diced)
Garlic. (chopped)
Red bell pepers. (diced)
Mixed Veg (frozen will do).
Prawns (large) approx 100gr/person.
Chicken (we use breast) but any part will do, cut into 20mm cubes, or larger if it has bones, you can also use Rabbit, Pork, infact any type of meat.
Mussels (Mejillones).
Red Colourant (or Safron if not to expensive, its cheap here)
Salt, Peper, Paprika, Parsley, Tumeric, Lemons, (to decorate and taste)

Method. (When cooking Paella, use a large diameter, rather than a deep pan)

Heat about 3 or 4 tbl spoons olive oil in a pan. (on mdeium heat).
Put in the Onions, and fry gently for few minutes, add the Garlic, and Peppers, and fry for a few more minutes untill the Onions are just turning soft.
Add the chicken (if using breasts) and cook for a few mor minutes untill the Chichen is just changing colour to an off white.
Add the Water and Mixed Veg, at this stage stir well for about a minute, add salt and Spices to individual tastes, add colourant (or Safron),
Add the rice (by sprinkleing all over the pan) and stir again.
Add the Mussels,
after about another 5 mins stir again thoroughly.
cook for about 5 more mins, then lower the heat very low, stir again thoroughly.
cook for a further 10 minutes and add the Prawns, stir them in gently.
Cook for a further 15 minutes, (or untill the water has been absorbed by the rice).
turn off the heat and leave for a further 2 to 3minutes, to allow the rice to absorb any water that is left.

Serve with Barra de Pan, (French Bread Stick) cut in slices, and wine of choice.

Variations of above are:- Valenciana (like mixta but add fish), Verduras (Vegitarian), Marisco (Shellfish), Pescado (Fish only).
